Cucumber Salad

I love the freshness of summer foods. All the great vegetables are fresh and the flavors are just, happiness. Cucumber salad is a love of mine. It’s cool and refreshing on hot summer days, and goes as a wonderful side dish with just about anything. It’s versatility makes Cucumber Salad not only a great healthy option to keep in the fridge, but a wonderful Pot Luck recipe for BBQs and Picnics.

Actually, if I am being completely honest, the best part about it is it takes about 5 minutes to make. Seriously, I made this batch while also putting away groceries. Here is how to make it:

Cucumber Salad

2 medium cucumbers

½ cup white vinegar

½ cup water

2 tablespoons sugar

Sprinkling of fresh dill (if desired)

First Step: Score the cucumbers by running a fork down the sides. This helps the dressing seep in and adhere to the cucumbers.

But it also makes them kind of look pretty.

Slice the cucumbers and put them in a sealable Tupperware container.

In a small saucepan, add the vinegar and water. Bring to a low boil. Once boiling, add the sugar. Once the sugar is dissolved, pour the mixture over the cucumbers. Seal the container and place them in the fridge for 3 hours. About an hour before serving, sprinkle on the Dill.

Ta-da! That’s all it takes to make this light, refreshing, and healthy side dish.

    I love cucumber salad. We call it marninated cucumbers. Mother kept a container going all summer. Reading the recipe makes my mouth water.
