Savory Sausage Breakfast Quiche

Is there anything better than big breakfast? I don’t cook it very often, but man there is nothing better than a Saturday morning with a big breakfast. One of my favorite dishes around the holidays is breakfast casserole. I seriously cannot get enough of the stuff. But, making a huge casserole for just my husband and myself hardly seems worth it. That is why I love this Savory Sausage Breakfast Quiche. It gives me all the joy of a breakfast casserole, and it just enough for the two of us for a weekend worth of breakfasts.

Growing up, quiche was always something of a fancier meal that was only seen at bridal showers or around Easter time. As I started learning how to cook I was amazed at how easy they are to actually make (this is especially true when you cheat and buy a pie crust).

Savory Sausage Breakfast Quiche

1 frozen pie crust (I use Marie Calendar’s)
4 eggs, beaten
1/2 Pound breakfast sausage (half of one roll of sausage)
1 cup whipping cream
1 teaspoon rosemary
1/2 teaspoon salt
pinch of black pepper

Cook pie crust to instructions on the package and let cool while you prepare the other ingredients. After the crust is cooked, preheat oven to 450 degrees. In a skillet, brown the breakfast sausage breaking up into little pieces as you go. In a mixing bowl, combine all other ingredients. Once sausage is cooked, drain and add to egg mixture. Pour mixture into pie crust. Cook, uncovered at 450 degrees for 15 minutes. Reduce heat to 375, cover quiche with tin foil, and cook for an additional ~10 minutes, or until the egg is cooked through. Serve warmed.
